Story
A Japanese all-purpose knife built to breeze through everyday kitchen tasks
As the oldest cutlery manufacturer in the USA, Lamson knows a thing or two about knives. They’ve been churning out top-tier kitchenware since 1837—the same year that Michigan was admitted as a state, and the same year Houston was granted a city charter. They channeled those 185 years of experience into this Japanese all-purpose knife, built to breeze through chopping, slicing, dicing, and mincing tasks. Made from Lamson’s proprietary hi-carbon American steel that’s cut, ground, polished, and sharpened in their Massachusetts facilities. It doesn’t get more authentic than that.
Features
- Japanese-inspired chef knife built for chopping, slicing, dicing, and mincing
- Features a deep belly, a slim blade, a predominantly straight edge crafted for chopping rather than rocking
- The Kullenschliff edge is designed to create an air pocket between the food and the blade, helping to prevent sticking
- Blade is made from high-carbon, USA-made stainless steel that’s hard, wickedly sharp, retains an edge for longer and highly corrosion resistant
- Blade tip is not sharp for increased safety and ease of use in the kitchen
- Sleek, tapered walnut handle facilitates both traditional and pinch grips
- Curved, recessed integrated bolster provides a seamless transition from handle to blade, resulting in comfortable thumb and finger support for better control and safety
- Full-tang blade with double brass riveted handle ensure ideal balance and weight
- Lifetime warranty against manufacturing defects
- Made in USA

Care
- Hone your knife regularly (as frequently as with every use) with a honing steel or leather strop to maintain its edge
- If the edge remains dull after honing, please have your knife professionally sharpened
- Use wood or plastic cutting boards only
- Clean knife after every use
- Hand wash only in warm soapy water with mild detergent
- Dry knife immediately after washing
- Do not use dishwasher
- Lamson recommends the use of Lamson Mineral Oil for protecting and enhancing wooden handled knives
- Apply oil with a soft cloth periodically to help prevent the wood from drying out
- Store knives properly with a protective cover, wooden knife block, wooden knife tray, or magnetic strip
- Use knives only as intended
- Never use a knife as a chisel, screwdriver, can opener, or for any other purpose for which it was not designed
